Viteaux Bread Pudding and Wiskey Sauce

Tear bread into pieces. Place in a 4 quart mixing bowl
- Whiskey Sauce:
- 1 ½ Pounds French Bread (Real hard crusted Bread)
- 1 Dozed Eggs, beaten
- ½ Pound Butter, melted
- 6 ½ Ounces Evaporated Milk
- 2 Cups Sugar
- 2 Cups Whole Milk
- 2 Tablespoons Mexican Vanilla
- 1 ¾ Chopped Pecans (Toasted)
- 1 Cup Butter, Softened
- 1 Cup Confectioner’s Powdered Sugar
- 1 Egg Yolk (beaten)
- 4 Tablespoons Whiskey
Raw Apple Cake

>Cream shortening and sugar
- 2 cups sugar
- 1/2 c shortening
- 2 eggs
- 2 c flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 t cloves or 1 tsp vanilla
- 4 c finely diced apples.
Country Style Pot Roast and Gravy

>Brown roast in hot oil in Dutch Oven
- 1 (4-5 lb) bonless chuck roast
- 1 tbs vegtable oil
- 1 (1 oz) envelope of onion soup mix
- 2 cups water
- 6 new potatoes, quartered
- 2 carrots, cut into 2 inch pieces
- 1/2 (10 oz) pkg red pearl onions, peeled
- 2 tbs all purpose flour
- 1/2 cup water
- 1/4 tsp salt
- 1/4 tsp pepper
Speedy Chinese Noodles

Heat oil in skillet over medium-high heat
- 1/4 c oil
- 6 cloves garlic, chopped
- 1/8-1/4 tsp red pepper flakes
- 8 0z pkg think spaghetti, cooked
- 2-4 tbs soy sauce
- garnish with green onion

Heat oven to 375°. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, sliced
- 1 can (28 ounces) whole tomatoes
- 1 can (15 ounces) tomato sauce
- 2 tablespoons tomato paste
- 2 teaspoons sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14.5 ounces) basil-and-oregano diced tomatoes, drained
- 1/2 cup fresh basil leaves, chopped
- 1 box (16 ounces) ziti
- 1 bag (8 ounces) shredded part-skim mozzarella cheese
- 1/4 cup grated Parmesan or Pecorino Romano cheese
Balsamic Parmesan Roasted Asparagus and Tomatoes

1. Toss the asparagus and tomatoes in the oil, salt and pepper
- 1 1/2 lbs asparagus, trimmed
- 1 1/2 cups cherry tomatoes, cut in half
- 1 tbs oil
- salt and pepper to taste
- 1/2 cup parmigiano reggiano grated
- 1/2 cup balsamic vinegar
- 2 tbs basil, sliced

Egg, Cheese, Sausage Casserole
- 6 eggs
- 2 cups milk
- 1 Tsp. Salt
- 1 Tsp Dry Mustard
- 2 or 3 slices day old bread cubed
- 1 lb drained pork sausage
- 1 cup grated cheese
Ham Fried Rice

*Cook bacon slices in a large skillet or wok over medium high heat until crisp
- 3 bacon slices
- 1 1/2 cups chopped cooked ham
- 1 red or green bell pepper, chopped
- 1/2 cup sliced fresh mushrooms
- 3 green onions, chopped
- 1 celery rib, chopped
- 1 large garlic clove, minced
- 1/2 tsp dried crush red pepper
- 3 1/2 cups cooked rice
- 2 large eggs, lightly beaten
