Lowcountry Smothered Pork Chops (Paula Deen's Recipe)

Trim the excess fat from the chops and season well with salt, pepper, and cayenne
- 4 center-cut pork chops, 1-inch thick
- Salt and freshly ground black pepper
- Ground cayenne pepper
- 2 tablespoons butter
- 1/4 cup all-purpose flour, spread on a plate
- 2 medium green bell peppers, stemmed, cored, and membranes removed, cut into strips
- 2 yellow onions, trimmed, cut lengthwise
- 3 cloves garlic, minced
- 2 cups chicken broth
- 2 to 3 dashes Worcestershire sauce
Oatmeal Chocolate Cake (Alice Wilson)

Bake at 350 in 8" pan
- Cream this and add:
- 1/2 c. oatmeal
- 3 tbsp. cocoa
- 1 c. boiling water
- Mix together and set aside to cool.
- 1/2 c. margarine
- 1 1/3 c. brown sugar
- 2 beaten eggs
- Now add:
- oatmeal mixture
- dissolve 1 tsp. soda in 1/4 c. boiling water
- 1 cup flour with 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. vanilla

Place tomatoes in food processor and pulse on/off until tomatoes are crushed
- 28 oz. can diced tomatoes
- 2 tbsp. olive oil
- 4 garlic cloves, minced
- 1 small can black olives, chopped
- 2 tbsp. drained capers, minced
- 1/4 to 1/2 tsp. red pepper flakes
- 1/4 tsp oregano (dry)
- 1/4 tsp salt
- 1 lb. pasta
- 1/4 c. chopped fresh parsley
- 5 sausages- cooked (oven @375 for 20 - 30 minutes)
- 1/2 c. white wine
- 3/4 c. chicken broth
- 2 tbsp. butter
Grilled Rosemary Chicken with Tomato-Avocado Salsa

Make the salsa after the chicken comes off the grill
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp chopped fresh rosemary
- 1 tbsp minced garlic
- 4 chicken cutlets
- 1/4 tsp salt
- 1/4 tsp pepper
- Cooking spray
- Tomato-Avocado Salsa

This is a chicken, bacon, lettuce and tomato sandwich
- 12 thick-cut slices smoked bacon
- 1/2 cup good mayonnaise (recommended: Hellman's)
- 1/2 cup ketchup
- 8 slices good white bakery bread, cut 1/2-inch thick
- 4 to 8 tender green lettuce leaves, washed and spun very dry
- 2 large ripe tomatoes, thickly sliced
- Kosher salt and freshly ground black pepper

- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 3/4 cup uncooked quick-cooking grits
- 1/2 cup sugar
