Brocolli Salad

Mix salad ingredients together
- For the dressing:
- 1/4 c. chopped red onion
- brocolli
- 1/4 c. strong cheese
- 1/4 c. sunflower seeds
- 6 strips of bacon, crumbled
- 2 tbsp. mayo
- 2 tbsp. vinegar or dill pickle juice
- 2 tbsp. sugar or equivalent

- 2 cups Chopped dates
- 1/2 cup Sugar

- 1 tsp lemon juice

Slow Cooker Beef Barley Soup

Use large crockpot. Add the leftover beef (cubed) and bones and spices
- leftover roast beef and bones
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 teaspoons garlic powder
- 1 box of beef broth
- 6 cups water
- 4 stalks celery, chopped
- 6 carrots, chopped
- 1 large white onion, chopped
- 1 cup barley
Mashed Yellow Turnips woth Crispy Shallots

Topping turnips with shallots cooked in oil and butter gives a whole new twist to this sometimes unloved vegetable
- 1 1/2 cups light olive oil
- 3 tbsp unsalted butter
- 5 to 6 shallots, peeled and thinly sliced
- 2 large yellow turnips (rutabagas), about 4 pounds
- Kosher salt
- 1 cup whole milk
- 6 tbsp salted butter
- 1/2 tsp freshly ground black pepper
Turkey Noodle Soup

In stockpot, bring stock to a boil; add noodles
- Stock:
- 1 turkey carcass
- 10 - 15 cups of water (enough to cover the carcass)
- 1 bay leaf
- 1 stalk of celery (including leaves) chopped
- 1 onion, quartered
- In stock pot or large saucepan, combine carcass, water, bay leaf, celery and onion. Simmer, covered for 4 hours. Strain, reserving stock. Let bones cool, then pick out any meat and add to stock. (you should have about 6 cups)
- Soup:
- 1/3 cup broken noodles (1/2 inch)
- 2 stalks celery (including leaves)chopped
- 1 carrot, chopped
- 3 green onions, sliced
- 1 tsp dried basil
- 1 tsp dried thyme
- dash hot pepper sauce
- salt and freshly ground pepper

Italian Sausage Puttanesca

For less heat in this spicy dish, use mild turkey Italian sausage
- 8 oz. uncooked penne pasta
- 8 oz. hot Italian sausage
- 1 c. chopped onion
- 1 c. chopped green bell pepper
- 3 garlic cloves, minced
- Cooking spray
- 2 (14.5 oz.) cans diced tomatos
- 1/2 c. halved pitted kalamata olives
- 2 tbsp. tomato paste
- 1 tbsp. capers, drained
- 1/2 c. (2 oz.) finely shredded Parmesan cheese
Strawberry Sweet Onion Gazpacho

- 4 mint leaves
- 1/4 cup thai basil
- 3 cups sliced strawberries
- 2 tbsp Jalapeno Jelly
- 1/4 tsp pepper
- 1 tsp salt
- 1 tsp chili sauce
- 2 cloves garlic
- 1 1/2 cups thin sliced red onion
- 1 tbsp butter
- 4 tbsp port
- 1 cup vegetable stock, cold
- 1/4 cup yogurt

- 3 tbsp. of instant coffee mixture (mix double strength)
