Place pork chops in a large plastic bag or resealable container
- 4 loin rib end chops
- 3 limes
- 2/3 cup pineapple juice
- 1 tbsp molasses
- 1 tsp worcestershire sauce
- 2 cloves garlic, minced

- PASTRY:
- 1 Tbsp sugar
- 1 1/4 cup flour
- Pinch salt
- Zest of 1 lemon
- 1/4 cup cold unsalted butter, cubed
- 2 Tbsp ice water
- 1 tsp white vinegar
- FILLING:
- 1 cup pine nuts
- 3/4 cup honey
- 2 Tbsp 35% cream
- 2 Tbsp amber rum
- 2 tsp aged balsamic vinegar
- 1/2 tsp vanilla
- 1/4 tsp salt
- 2 eggs lightly beaten
- 2 Tbsp butter, cut into very small pieces
