- Reserve 2 tbsp. green onions.
- Mix remaining onions with all ingredients.
- Refrigerate at least 1 hour
- Sprinkle with reserved onions. Serve with crackers
GREEK CHICKEN WITH FETTUCCINE

In a large bowl, whisk together the olive oil, lemon juice, 1/2 tsp of salt and 1/4 tsp pepper
- 2 tablespoons extra virgin olive oil
- Juice of 1 lemon
- Salt and ground black pepper
- Meat from rotisserie chicken (about 1-1/2 pounds cooked chicken meat)
- 8 ounces feta, cut into small cubes or crumbled
- 1 pint-cherry tomatoes halved
- 1 tablespoon fresh oregano leaves
- 1 red bell pepper, cored and diced
- 12-ounce package freesh fettuccine
CREAMY TOMATO CHICKEN

1. In a large sskillet, cook the chicken over medium heat in oil until a meat thermometer reads 170 degrees
- 6 boneless skinless chicken breast halves (4 ounces each)
- 2 Tbsps. canola oil
- 1 can (14-1/2 ounces) Italian diced tomatoes undrained
- 1 can (10-3/4 ounces) condensed Cream of Chicken soup, undiluted
- 1/2 Tsp. ground cinnamon
- 6 slices part-skim mozzrella cheese
- Hot cooked noodles
COOKIES AND CREAM

Cream together cream cheese, butter and powdered sugar and vanilla
- 1 bag Oreos, crushed
- 8 ounce Cream Cheese, softened
- 1/4 butter
- 1 cup powdered sugar
- 3 cups milk
- 2 small boxes instant vanilla pudding
- 1/2 teaspoon vanilla
- 12 ounces Cool Whip, thawed
ROASTED VEGETABLES WITH CHIPOTLE CREAM

Mix all the vegetables and mix all the seasoning
- CHIPOTLE CREAM:
- 1 Butternut Squash, cut into cubes
- Zucchini, cut into cubes
- 1 Red Pepper, cut into cubes
- 1 can Red Kidney beans, drained and rinsed
- Olive oil
- Oregano
- Cumin
- Greek Yogurt
- 1 chipotle pepper, cut into small cubes with seeds
- Juice of 1 lime
- 1/2 teaspoon Agave syrup
NACHO DIP

1. Mix sour cream and cream cheese togehter which makes bottom layer
- 1 large Philadelphia cream cheese
- 1 small sour cream
- 1 lb. ground beef
- 1 package taco mix
- 1 jar of salsa sauce
- 1 medium green pepper, diced
- 5 to 6 green onions, chopped
- 1 to 2 tomatoes, diced
- 2 cups of old cheddar cheese
UP-SIDE-DOWN CAKE

Cream butter and sugar. Add egg yolk one at a time beating well after each addition
- CARAMELIZE:
- 1-1/2 cup sugar and pour at once in 12-inch round pan and 2 Tbsps melted butter
- STRAIN:
- 1 can sliced pineapple and decorate in and together with the prunes or cherries
- PREPARE:
- 1/4 cup pineapple juice
- 1/4 cup water
- Mix together and set aside
- BUTTER CAKE:
- 3/4 cup fresh butter
- 1 cup sugar
- 5 egg yolks
- 1-1/2 cup cake flour ] Mix together and
- 3-1/2 tsps Baking Powder ] sift once
- 1/4 tsp salt
- 1/2 cup diluted milk (1/4 cup milk and 1/4 cup water)
CHICKEN-FRIED STEAK WITH SPICED MILK GRAVY

For the marinade. Soak the tenderized steaks in the buttermilk for 1 hour or up to overnight
- STEAK MARINADE:
- 8 4oz. 1/4-inch thick eye of round steaks, needled or pounded and tenderized
- 1 cup buttermilk
- CHICKEN FRIED STEAK:
- 1-1/2 cups all purpose flour
- 1 tbsp kosher salt
- 2 tsps black pepper
- 2 tsps garlic powder
- 1 tsp baking soda
- 1 tsp cayenne pepper
- 1 tsp onion powder
- Vegetable oil for frying
- SPICED MIX GRAVY:
- 3 tbsps butter
- 3 tbsps all purpose flour
- 1 cup low sodium chicken broth
- 1 cup whole milk
- 1 tbsp Worchestershire sauce
- 2 tsps smashed brined peppercorns
- 1 tsp brining liquid from the peppercorns
- 2 dashes hot sauce
HAMBURGER STEW - CROCK POT

(1) Brown meat and onions in saucepan
- Ingredients
- 2 lbs. ground beef
- 1 medium onion, chopped
- 1 garlic clove, minced
- 2 cups tomato juice (or Spicy V8, if you want a little kick)
- 2-3 carrots, sliced
- 2-3 ribs celery, sliced
- half a green pepper, chopped
- 10 oz. frozen corn
- 10 oz. frozen green beans
- 2 medium potatoes, cubed (or substitute with one cup of barley)
- 2 cups water (or if you want it extra beefy, use one cup water and one cup of beef broth)
- 1 tablespoon worcestershire sauce (I used Lea & Perrins original)
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
- 1/4 tsp. dried thyme
- dash of hot pepper sauce
- 2 tablespoons dry onion soup mix, or 1 beef bouillon cube
- 1 tsp. salt
- 1/4 tsp. pepper (Salt and pepper can be adjusted to taste. Feel free to add a little hot sauce, such as Tabasco, if you want it extra spicy.)
