FRUIT CAKE - LIGHT (Mom Chartrand)

- CAKE BATTER:
- 1/2 lb. Butter (1 cup butter)
- 1 cup white sugar
- 3 eggs - beat separately in a bowl
- 2 tsps Vanilla
- 2-3/4 cup all-purpose flour
- 1 tsp Baking Powder
- 1 cup pineapple juice (heat the juice till lukewarm)
- FRUITS:
- 1 canned Pineapple Tidbits - drained, save 1 cup of the pineapple juice for the Cake Flour mix.
- 1 lb. of candied green cherries (454G OR 500G = 2 CUPS)
- 1 lb. of candied red cheeries (2 cups)
- (NOTE: Cut the candied fruits to 4 pieces)
- 1-1/2 lb. golden raisins - wash the raisins and remove the stems (3 cups)
- 1 lb. mixed candied peel (e.g. citron, lemon, orange) - cut to small pieces (2 cups)
FRESH STRAWBERRY MUFFINS

Cream butter and sugar. Add egg and mix well
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/2 tsp vanilla
- 1-1/2 cups chopped strawberries
- 3 tsp sugar
- 1/2 tsp cinnamon
CHILLED ORZO SALAD

Cook orzo according to package directions, then rinse in ice water until chilled
- 12 ounces dry orzo
- 1 bulb fennel
- 1/4 cup plus 3 teaspoons olive oil (divided use)

- For the stock:
- 4 to 5 cups cooked turkey or chicken meat, chunked or shredded, bones and meat reserved separately (great for leftover turkey or rotisserie chicken)
- 1 large white onion, chopped
- 2 carrots, cut in thirds
- 3 stalks of celery, cut in thirds
- 2 tablespoons black peppercorns
- 1 handful parsley, chopped
- For the gumbo:
- 6 to 8 cloves of garlic, minced
- 1 large white onion, chopped
- 6 stalks of celery, cut in thirds
- 2 red bell peppers, chopped
- 2 green bell peppers, chopped
- 1 bunch of green onions, chopped
- 6 stalks of celery, chopped
- 1 cup plus 3 tablespoons of cooking oil (canola, corn, vegetable), divided

- 2 15-ounce cans diced tomatoes
- 1 14-ounce package of andouille sausage, chopped in half-inch slices
- 1 14-ounce package of smoked sausage, chopped in half-inch slices
- 2 tablespoons kosher salt

- 1 tablespoon cayenne pepper
- 3 bay leaves
- 1 bag of frozen chopped okra, thawed

- 6 cups all-purpose flour, plus an additional 1/2 cup flour, divided
- 3 eggs
- 2 cups pineapple juice, room temperature
- 3/4 cup sugar
- 1 teaspoon vanilla
- 2 (1/4 ounce) envelopes yeast
- 1/2 cup (8 tablespoons) butter, melted
POTATO CORN CHOWDER

Cook ham, celery and onion in butter in large saucepan until vegetables are tender
- 1-1/2 cups diced cooked ham
- 1 cup diced celery
- 1/2 cup chopped onion
- 1 tablespoon butter or a little more
- 1 can 13-3/4 oz. condensed cheddar cheese soup
- 1-1/2 cups milk
- 1 can 14-1/2 oz. Del Monte diced potatoes
- 1 can 14-3/4 oz. Del Monte Cream Style golden sweet corn
SUSAN’S BANANA COCONUT CREAM PIE

Crumbs: Mixed 2 cups graham crumbs and ½ cup melted butter
- 3 Tbsp. Cornstarch
- 1-1/3 Cup water
- 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (not evaporated milk)
- 3 Egg yolks, beaten
- 2 Tbsps. Butter
- 1 Tsp. Vanilla Extract
- 1/2 cup flaked coconut, toasted
- 2 – 3 medium banana dipped in lemon juice (sliced)
- 2 cup Graham crumbs
- 1/2 cup butter
- 1 pint whipping cream
Date Squares

Press 1/2 the mixture over the bottom of a greased 8" square pan
- Date Filling:
- Combine in a saucepan:
- 1 c. chopped dates ( I use the dates in a solid block and chop them up ..Use the whole block)
- 1 tablespoon br. sugar
- 1/2 c. water ( Add a touch more water if needed)
- Bring to boil and cook until dates are soft enough to be mashed with a fork( about 5 min.). The mixture should be the consistency of jam. Add 2 tbsp. of lemon juice . Set aside to cool.
- Crumb Mixture:
- Preheat oven to 325 degrees.
- Blend or sift together:
- 1 c. pre-sifted all purpose flour
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- Cut in:
- 1 c. butter (or margarine)
- Then blend in:
- 1 c. lightly packed brown sugar
- 2 c. rolled oats
CREAMED POTATOES AND PEAS

Preheat oven to 325 degrees F
- 2 lbs red potatoes, boiled
- 1/4 cup butter 3 Tbsp. flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 cups milk
- 1 cup evaporated milk
- 10 oz. frozen peas
- 1/2 cup onion, diced
- 4 slices bacon, cooked and crumbled
PHILLY CHEESESTEAK STUFFED PEPPERS

Slice a thin piece off each pepper lengthwise, remove ribs and seeds
- 1 lb. thinly sliced sirloin steak or deli roast beef
- 8 slices Provolone cheese
- 4 large Red Bell peppers
- 1 medium sweet onion
- 1 pound white mushrooms
- 3 tablespoons butter
- 3 tablespoons olive oil
- Salt and pepper to taste
