Spicy Black Beans

- 2 cups (about 1 pound) dried black beans, picked over, soaked overnight
- 3 tablespoons extra-virgin olive oil
- 1/2 medium onion, diced
- 1 jalapeno pepper, chopped
- 2 cloves garlic, chopped
- 1 bay leaf
- Kosher salt and freshly ground black pepper
Mozzarella Sticks

String cheese is a easy option to use instead of cutting a block of cheese
- oil for frying
- 1 (8oz) pkg mozzarella cheese
- 3 T. All-purpose flour
- 2 large eggs
- 1/4 cup water
- 2/3 cup Italian seasoned bread crumbs
- 1/3 cup grated Parmesan cheese
- 1/4 tsp garlic powder, optional
Emmanuel's Baked Artichoke Hearts

Preheat oven to 400 degrees F
- 2 * 2 (15-ounce) cans artichoke hearts in water, 6 to 8 count, drained
- 1 * 1 tablespoons extra-virgin olive oil, 2 turns of the pan, plus a drizzle to coat baking dish
- 1/4 * 1/4 ripe lemon
- 1 * 1 tablespoon butter
- 3 * 3 cloves garlic, chopped
- 6 * 6 flat anchovies fillets
- 1 * 1 cup Italian style bread crumbs, 3 handfuls
- 1/4 * 1/4 cup chopped flat leaf parsley
- 1/4 * 1/4 cup grated Parmigiano-Reggiano, a couple of handfuls
- * Coarse black pepper
Smoked Mozzarella Pesto Bread

Easy to make appetizer...
- 1 package of braided smoked mozzerella (found at meijer or marsh)
- 1 bagette of french bread
- 1 jar of "Classico" sun-dried tomato pesto
Carne Asada

Lay the flank steak in a large glass baking dish
- Marinade:
- 1 1/2 pounds flank steak
- lime wedges
- 3 T. white vinegar
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 limes, juiced
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
Basic Italian Dressing

Place all the ingredients in a food processor or blender
- 2/3 cup Extra Virgin Olive Oil
- 1/4 cup red wine vinegar
- 1 tsp minced garlic
- 1 tsp dried oregano
- 1/2 tsp dried tarragon
- 1/4 tsp salt
- 1/4 tsp coarsely ground pepper
Easy Enchilada Sauce

In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon
- 3 tablespoons vegetable oil
- 1 tablespoon flour
- 1/4 cup chili powder
- 2 cups chicken stock
- 10 ounces tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
Taco Pie or Taco Skillet Bake

Make the corn meal according to directions, add cheese if desired, set aside
- 1 box Jiffy corn meal
- 1 can black beans – draind
- 1 can diced tomatoes – RED GOLD Mexican fiesta or with Green Chiles - drained
- 1 can kernel corn - drained
- 1 pkg taco powder
- 1 lb ground beef cooked with seasoning
Chocolate No-Bake Cookies

Melt butter, stir in sugar, cocoa, milk
- 1 stick butter
- 1/4 cup cocoa
- 1/2 milk
- 3 cups oats
- 2 cups of sugar
