- 3 cups rolled oats
- 3/4 cup toasted wheat germ
- 3/4 cup walnuts, coarsely chopped
- 1/2 cup frozen apple juice concentrate, thawed
- 1/4 cup packed light brown sugar
- 2 T. vegetable oil
- 1/2 cup dried cherries, raisins or other dried fruit, halved or chopped if large, optional

- 8 chicken thighs, skin removed (2 pounds)
- 3/4 cup Old El Paso® salsa (any variety)
- 1/4 cup peanut butter
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 teaspoon grated gingerroot
- 1/4 cup chopped peanuts
- 2 tablespoons chopped fresh cilantro
Seared Asian Tuna Steaks

A Microplane is the best tool for grating ginger
- 1 tablespoon fresh ginger, peeled and finely grated
- 6 scallions (1 cup), thinly sliced crosswise
- 1/3 cup rice vinegar
- 1/4 cup toasted sesame oil
- Coarse salt and ground pepper
- 3 tablespoons vegetable oil
- 1 1/2 pounds small eggplant (about 4), halved lengthwise and sliced 1/2 inch thick
- 4 tuna steaks (6 to 8 ounces each and 1 inch thick)
Cedrics Ranch Wings

- 3 1 oz packets ranch dressing mix
- 1 1/2 cup all-purpose flour

- 1/4 cup hot sauce

1) Place zucchini in strainer; sprinkle with salt
- 4 cups shredded unpeeled zucchini
- 1/2 tsp salt
- 2 eggs
- 1/2 cup grated parmesan cheese
- 1 cup (4 oz shredded cheddar cheese, divided)
- 2 cups (8 oz shredded part-skim mozzarella cheese, divided)
- 1 lb ground beef (lean at least 80%)
- 1/2 cup chopped onion
- 1 can (15 oz) Italian tomato sauce or 1 can (15 oz) tomato sauce with 1/4 tsp oregano, 1/4 tsp basil
- 1 Medium green pepper, chopped

- 2 medium roma (plum) tomatoes, chopped

- 1 can (15 oz) black beans with cumin, undrained
- 1 can (7 ounces) Green Giant® whole kernel corn, drained
- 6 garden vegetable-flavored flour tortillas, (8 inches in diameter)

- 1 can (10 3/4 ounces) condensed cream of chicken soup
- 1 cup Original Bisquick® mix
- 1/2 cup milk
- 1 egg

Fun and tasty! A rosemary-lemon marinade gives these grilled kabobs loads of flavor
- Rosemary-Lemon Marinade
- 1/4 cup lemon juice
- 3 tablespoons olive or vegetable oil
- 2 teaspoons chopped fresh rosemary leaves or 1 teaspoon dried rosemary leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 cloves garlic, finely chopped
- Chicken and Vegetables
- 1 lb boneless skinless chicken breasts, cut into 1 1/2 inch pieces
- 1 medium red bell pepper, cut into 1-inch pieces
- 1 medium zucchini or yellow summer squash , cut into 1-inch pieces
- 1 medium red onion, cut into wedges
- 1 lb fresh asparagus spears
- 1/4 cup crumbled feta cheese (1 oz)
