Great dish to take to a pot luck
- 8 cups sliced zucchini(about 2 1/2 pounds)
- 1 cup chopped onion
- 1/2 cup fat-free, less-sodium chicken broth
- 2 cups cooked rice
- 1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese
- 1 cup fat-free sour cream
- 1/4 cup (1 ounce) grated fresh Parmesan cheese, divided
- 1/4 cup Italian-seasoned breadcrumbs
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
Chicken and Yellow Rice

- Yellow Rice:
- 3 lbs. chicken pieces, cut up
- 4 cloves garlic
- 1 teaspoon dried oregano
- 1 teaspoon salt
- freshly ground pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons olive oil
- 3 cloves garlic, peeled and chopped
- 1 medium yellow onion, peeled and diced
- 1 medium red bell pepper, cored seeded & diced
- 1 cup frozen peas
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 envelope Vigo coloring, (or annatto oil)
- 2 cups long-grain white rice
- 4 cups water
Beef Bourguignonne

Brown Meat in hot bacon drippings until browned add the chopped onion and garlic
- 1 1/2 lbs. beef chuck roast, cut 3/4 inch cubes
- 2 tablespoons bacon drippings, or veg. oil
- 1 cup chopped onion
- 1 clove garlic clove, minced
- 1 1/2 cups Burgundy
- 3/4 cup beef broth
- 1 teaspoon dried thyme, crushed
- 3/4 teaspoon dried marjoram, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 bay leaves
- 8 ounces mushrooms, whole, halved if big
- 4 medium carrots, cut in 3/4" pieces
- 2 cups frozen pearl onions, or 8oz. fresh
- 1/4 cup cold water
- 2 tablespoons all-purpose flour
- 2 slices bacon slices, drained and crumbled
- 3 cups cooked noodles
French Dip Crock Pot

Mix all sauce ingredients
- 3 lbs. beef chuck roast
- 2 c. water
- 1/2 c. soy sauce (use lite, otherwise too salty)
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 bay leaf
- 3 whole peppercorns, (3 to 4)
- 8 french rolls
Old Fashioned Peanut Butter Cookies

Cream butter sugar and peanut butter
- 1 cup creamy peanut butter
- 1 stick butter
- 1 cup firmly packed brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt

HEAT dressing in large nonstick skillet on medium-high heat
- 1/4 cup KRAFT Zesty Italian Dressing
- 1 boneless chuck blade or shoulder steak (1 lb.), cut into 4 pieces
- 1/4 cup flour
- 1/4 cup tomato paste
- 1 can (14-1/2 oz.) diced tomatoes, undrained
- 1/2 cup beef broth
- 1 green pepper, chopped
- 1/2 cup shredded KRAFT Swiss Cheese

Coat a large nonstick skillet with cooking spray
- 2 sprays sprays cooking spray
- 4 patties frozen hash brown potato patty, prepared without fat (4 Hannaford Hashbrown Patties)
- 2 large egg
- 3 large egg whites
- 4 ounces Dak 98% Fat Free Ham, finely chopped (original recipe used Canadian Bacon)
- 1 tablespoon scallions, minced, green part only
- 1/8 teaspoon hot pepper sauce, optional
- 1/8 teaspoon table salt, or to taste
- 1/8 teaspoon black pepper, or to taste
- 8 teaspoons ketchup, hot and spicy variety (optional)
Grilled Bruschetta Chicken

- 4 small boneless skinless chicken breast halves (1 lb.)
- 1/4 cup KRAFT Sun-Dried Tomato Dressing, divided
- 1 tomato, finely chopped
- 1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
- 1/4 cup chopped fresh basil

- 2 teaspoon light mayonnaise, (with some prepared horseradish mixed in is nice)
- 1 cup spinach , some in sandwich and some on the side
- 1 cup carrots
- 2 ounces deli-style roast beef
