  • INGREDIENTS
  • (makes two 12-inch galettes)
  • 3 cups unbleached all-purpose flour (scoop and sweep the flour)
  • 3/4 teaspoon salt
  • 1 tablespoon sugar
  • 4 ounces unsalted butter, cut into 1/2-inch pieces and refrigerated
  • 4 ounces lard, cut into 1/2-inch pieces and frozen
  • 1 egg
  • 5 1/2 tablespoons ice-cold water
  • 1 teaspoon apple cider vinegar
  • FILLING:
  • (Makes one 12-inch galette)
  • 6 apples, peeled, cored and cut into 1/8-inch-thick slices
  • 1/2 cup brown sugar
  • Pinch salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon lemon zest
  • Egg wash (egg mixed with 1 tablespoon water)
  • Sugar, for dusting top of crust
