DIRECTIONS To make the pie: Have all of your ingredients ready and chilled
- THE CRUST:
- INGREDIENTS
- (makes two 12-inch galettes)
- 3 cups unbleached all-purpose flour (scoop and sweep the flour)
- 3/4 teaspoon salt
- 1 tablespoon sugar
- 4 ounces unsalted butter, cut into 1/2-inch pieces and refrigerated
- 4 ounces lard, cut into 1/2-inch pieces and frozen
- 1 egg
- 5 1/2 tablespoons ice-cold water
- 1 teaspoon apple cider vinegar
- FILLING:
- (Makes one 12-inch galette)
- 6 apples, peeled, cored and cut into 1/8-inch-thick slices
- 1/2 cup brown sugar
- Pinch salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon lemon zest
- Egg wash (egg mixed with 1 tablespoon water)
- Sugar, for dusting top of crust

- 1/2 teaspoon crushed red pepper
- 3 garlic cloves, minced
- 4 tablespoons red wine vinegar
- 2 (28-ounce) cans whole tomatoes
- 4 tablespoons heavy whipping cream
- Cooking spray
- 6 ounces part-skim mozzarella cheese, shredded and divided (about 1 1/2 cup)
- 2 ounce Parmigiano-Reggiano cheese, grated and divided (about 1/2 cup)
