Taqueria Style Tacos - Carne Asada

As a taco..or on a bed of rice
- Marinade:
- 3 pounds flank steak
- 1/3 cup white vinegar
- 1/2 cup soy sauce
- 4 cloves garlic, minced
- 2 limes, juiced
- 1/2 cup olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon ground white pepper
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Topping:
- 1 white onion, chopped
- 1/2 cup chopped fresh cilantro
- 1 lime, juiced
- Yummy Sauce:
- 2 large tomatoes, chopped
- 2 jalapeno peppers, chopped
- 1 white onion, quartered
- 4 cloves garlic, peeled
- 4 dried New Mexico chile pods
- 1 pinch salt and pepper to taste
- 1 (32 ounce) package corn tortillas
- 2 cups grated cotija cheese (optional)
- 2 limes, cut into wedges
Lemon Chicken Breasts

Directions Preheat the oven to 400 degrees F
- 1/4 cup good olive oil
- 3 tablespoons minced garlic (9 cloves)
- 1/3 cup dry white wine
- 1 tablespoon grated lemon zest (2 lemons)
- 2 tablespoons freshly squeezed lemon juice
- 1 1/2 teaspoons dried oregano
- 1 teaspoon minced fresh thyme leaves
- Kosher salt and freshly ground black pepper
- 4 boneless chicken breasts, skin on (6 to 8 ounces each)
- 1 lemon
Roasted Tomato Caprese Salad

- 12 plum tomatoes, halved lengthwise, seeds (not cores) removed
- 1/4 cup good olive oil, plus more for drizzling
- 1 1/2 tablespoons balsamic vinegar
- 2 large garlic cloves, minced
- 2 teaspoons sugar
- Kosher salt and freshly ground black pepper
- 16 ounces fresh salted mozzarella
- 12 fresh basil leaves, julienned
Caramelized Carrots

A cayenne pepper-spiced cream sauce tops these tender carrots
- 2 Tbsp. olive oil
- 2 lb. whole small carrots, peeled, tops on, and halved lengthwise
- 1/4 tsp. salt
- 4 cloves garlic, thinly sliced
- 2/3 cup whipping cream
- 1/8 tsp. cayenne pepper
- Snipped Italian (flat-leaf) parsley
Essence (Emeril's Creole Seasoning):

Combine all ingredients thoroughly and store in an airtight jar or container

- 2 tablespoons salt

- 1 tablespoon onion powder

- 6 cups thinly sliced red cabbage
- 1/2 cup matchstick-cut red apple
- 1/2 cup matchstick-cut green apple
- 1/3 cup roasted, salted pumpkin seeds
- 2 tablespoons chopped fresh cilantro
- 1/3 cup jalapeno pepper jelly
- 3 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 teaspoon salt
- Pinch pepper
- 1/4 teaspoon ground cumin
Grilled Romaine with Spicy Caesar Dressing

- 2 teaspoons Worcestershire sauce

- 1/4 small red onion, coarsely chopped
- 6 cloves roasted garlic
- 3 anchovies
- 1 chipotle in adobo
- 2 dashes hot sauce
- 1 to 2 tablespoons honey
- Salt and freshly ground black pepper
- 1/2 cup canola oil, plus more for brushing on the romaine
- 1/4 cup grated Parmesan, plus shaved Parmesan, for garnish

- 20 About 20 ripe plum tomatoes, peeled
- 1/3 About 1/3 cup extra virgin olive oil, plus more to finish the dish
- Pinch of crushed red pepper
- Kosher salt and freshly ground black pepper
- 1 tbs. unsalted butter 1 oz. freshly grated Parmigiano-Reggiano (about half a cup)
- 6 to 8 fresh basil leaves well washed and dried, stacked and rolled into a cylinder and cut thinly crosswise into a chiffonade
- 1 lb. spaghetti, either high-quality dry or homemade

- Extra-virgin olive oil
- 1 large Spanish onion, cut into 1/2-inch pieces
- 2 ribs celery, cut into 1/2-inch pieces
- 2 carrots, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch pieces
- 2 cloves garlic, smashed
- 1 1/2 cups tomato paste
- 2 to 3 cups hearty red wine
- 2 cups water
- 1 bunch fresh thyme, tied with kitchen string
