- 4 veal shanks, cut three inches thick (about 3 1/2 to 4 pounds)
- Salt and pepper
- 6 tablespoons extra-virgin olive oil
- 1 medium carrot, chopped into 1/4-inch-thick coins
- 1 small Spanish onion, chopped into 1/2-inch dice
- 1 celery stalk, chopped into 1/4-inch slices
- 2 tablespoons chopped fresh thyme leaves
- 2 cups Basic Tomato Sauce (recipe follows)
- 2 cups chicken stock
- 2 cups dry white wine
- 1 recipe Gremolata (recipe follows)
- Gremolata
- 2 lemons
- fresh parsley
- 5 cloves
- grate lemon, mix garlic, and parsley..garnish..
Watermelon Canteloupe Salsa

Fresh and delish! The ginger adds a special zing to this fresh melon salsa
- 1 1/2 cup seedless watermelon cubes
- 1/2 cup cantaloupe cubes
- 2 scallions, chopped, white parts and 1 inch of green parts
- 2 tablespoons fresh ginger
- 1 chili pepper, chopped
- 1/4 cup lime juice
Chocolate-Pistachio Cannoli

Put the chocolate in a microwave-safe bowl
- 1/4 cup chopped semisweet chocolate (about 1 1/2 ounces)
- 1/4 cup finely chopped pistachios
- 12 mini cannoli shells
- 1 cup fresh ricotta
- 1/2 cup confectioners' sugar, plus more for dusting
- 1 teaspoon grated tangerine or orange zest
- 1 tablespoon fresh tangerine or orange juice
- Pinch of ground cinnamon
- 2 tablespoons heavy cream

- 1 1/4 cups sun-dried tomatoes, chopped
- 3 tablespoons chopped garlic (9 cloves)
- 5 cups basil leaves, packed
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 3/4 cup good olive oil
- 1 cup freshly grated Parmesan
- 1 sheet puff pastry, defrosted (recommended: Pepperidge Farm)
- 1 egg mixed with 1 tablespoon water, for egg wash

- Glaze:
- 6-9 pork chops (not too thick, I used boneless pork loin)
- 2 eggs
- 2 cups flour
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- Canola or vegetable oil for frying chops
- 1 1/2 cups honey ( I only used 1/2 cup)
- 1/2 cup brown sugar (I added this)
- 1/2 tsp. ginger
- dash of cayenne pepper (to your taste)
- 1/2 cup soy sauce
- 1 Tbs chopped garlic
- 2 Tbs butter
Mesquite-Grilled Shrimp with Green Salsa

Shrimp: Combine all ingredients except shrimp in small sauce pan over medium heat until butter melts
- Shrimp:
- 1/2 oil
- 1/4 cup (1/2 stick) butter
- 2 T chili powder
- 2 T fresh lemon juice
- 1 LB large shrimp with heads
- Green Salsa:
- 5 tomatillos, husked, cored and quartered
- 1 med green tomato cored and quartered
- 2 garlic cloves
- 1 avocado peeld, pitted and cut into 1 inch peices
- 1 jalapeno/serrano seeded
Shrimp and Chorizo in Garlic Sauce

- 1 1/2 cups extra-virgin olive oil
- 1 pound spicy Mexican chorizo, casing removed
- 1/4 cup finely chopped sweet or Vidalia onion
- 1 teaspoon adobo seasoning
- 1 teaspoon Hungarian paprika
- Freshly ground black pepper
- 1 head garlic, peeled and finely chopped
- Salt
- 1 1/2 pounds peeled deveined shrimp (16/20 count)
- Crusty, chewy bread, for sopping
Orange Cranberry Sauce

- 2 oranges, zested and juiced
- 1/4 cup ruby port wine
- 3/4 cup sugar, or more as needed
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1 cup toasted pecans or walnuts
Baked Pesto Chicken

- 4 boneless, skinless chicken breasts
- salt and fresh ground black pepper for seasoning chicken
- 1/2 cup basil pesto (I used homemade Basil Pesto with Lemon, but you can use purchased pesto.)
- 2 oz. (1/2 cup) grated low-fat mozzarella cheese
