Basil Lemonade

Directions 1. In extra-large bowl or pitcher combine water, lemonade concentrate, sugar, and lime juice
- 12 cups cold water
- 2 12 ounce can frozen lemonade concentrate, thawed
- 1/3 cup sugar
- 1/4 cup fresh lime juice
- 1/2 cup firmly packed fresh basil leaves, torn (one .75-oz. pkg.)
- Lemon slices and fresh basil (optional)

Mix all dry ingredients together, slowly add the wet ingredients minus the apple
- 1 heaping cup AP flour
- 1/3 cup sugar
- 1 tsp. baking powder
- dash salt
- 1 - 2 tsp. cinnamon (depending on how much you love cinnamon)
- 1/4 tsp. nutmeg
- 1/2 tsp. vanilla
- 1 T. butter, melted
- 1 egg
- 1/3 cup milk + plus more if needed
- 1 - 1 1/2 cups chopped apple, your favorite kind for eating, peanut sized or smaller
- oil for frying
- milk and powdered sugar glaze for dipping or just powdered sugar for dusting
- (About 1 cup pwd. sugar + 1 T. milk or more)
Taco Bell Seasoning

1. Combine all of the ingredients in a small bowl
- 2 tablespoons flour
- 2 teaspoons chili powder
- 1 1/2 teaspoons dried minced onion
- 1 1/4 teaspoons salt
- 1 teaspoon paprika
- 3/4 teaspoon crushed beef bouillon cube
- 1/4 teaspoon sugar
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- dash onion powder
Baked Shrimp Scampi

Preheat the oven to 425 degrees F
- 2 pounds (12 to 15 per pound) shrimp in the shell
- 3 tablespoons good olive oil
- 2 tablespoons dry white wine
- Kosher salt and freshly ground black pepper
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 4 teaspoons minced garlic (4 cloves)
- 1/4 cup minced shallots
- 3 tablespoons minced fresh parsley leaves
- 1 teaspoon minced fresh rosemary leaves
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 extra-large egg yolk
- 2/3 cup panko (Japanese dried bread flakes)
- Lemon wedges, for serving
Cranberry Orange Relish

This is a very refreshing recipe I have used for years
- 2 cups cranberries (fresh or frozen, 1 12oz bag is also enough)
- 1 medium orange, quartered (ends removed)
- 3/4-1 cup sugar (or eqivalent artificial sweetener)
Easy Salad with Creamy Roasted Tomatillo Dressing

Directions Preheat the oven to 400 degrees F
- Dressing:
- 6 * 6 tomatillos, rinsed and halved
- 1 * 1 jalapeno, halved
- 1 * 1 red onion, quartered
- 2 * 2 tablespoons olive oil
- * Kosher salt and freshly ground black pepper
- 1/2 * 1/2 teaspoon ground cumin
- 1 * 1 cup Mexican crema
- 2 * 2 tablespoons fresh lime juice
- 1 * 1 head iceberg lettuce, shredded
- 4 * 4 Roma tomatoes, seeded and chopped
- 4 * 4 radishes, thinly sliced

Quick, easy, delish!
- for the toppings/garnish:
- 6 ripe, yellow tomatoes
- 3 ears of yellow corn, cooked and kernels removed
- 2 yellow peppers, diced
- 1/2 cup of yellow onion , diced
- 1 glove of garlic, minced
- a pinch of cayenne (or more, to taste)
- 1/2 a teaspoon of salt
- 2 tablespoons of champagne or white wine vinegar
- 3 tablespoons of extra virgin olive oil
- 3-4 green onions, thinly sliced
- a handful of micro greens
- 1 avocado, diced
- a handful of toasted almonds (optional)
