Cinnamon-Brown Sugar Dip

MIX first 5 ingredients until blended
- 1/4 cup PHILADELPHIA Cream Cheese Spread
- 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1 Tbsp. brown sugar
- 1/4 tsp. ground cinnamon
- 1 Tbsp. milk
- 2 apples, each cut into 8 wedges
Greek Salad VI

Directions Clean, slice, and combine salad ingredients
- Dressing:
- 1 head romaine lettuce (or substitute your favorite lettuce)
- 1 green pepper, sliced
- 2 ripe tomatoes, sliced
- 1 cucumber, sliced
- thinly sliced red onion, as many as you want
- good feta cheese, crumbled
- kalamata olives, as many as you want
- 1 handful toasted pine nuts
- grilled chicken or fish (optional)
- 1 tablespoon red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 slice fresh garlic, chopped or minced
- pinch of oregano
- salt, pepper to taste
- 4 tablespoons olive oil
- Clean, slice, and combine salad ingredients.
- Mix dressing ingredients in a bowl, stirring with a fork, and give it the sniff test (if it smells too much of vinegar, then add more oil). Add to salad ingredients.
- Toss, and enjoy!
Homemade Vanilla Pudding

Combine sugar, salt, and cornstarch in a saucepan
- 3/4 cup sugar
- 4 tablespoons cornstarch
- 1/8 teaspoon salt
- 1 cup cream ( You can use all milk, but I like to use at least part cream for the liquid)
- 2 1/2 cups milk
- 3 egg yolks
- 1 tablespoon butter
- 1 tablespoon vanilla

- 2 Tbsp. brown sugar
- 1 Tbsp. honey ( the second time I used 1 1/2 tbsp honey, 1 1/2 tbsp brown sugar)
- 1/4 cup soy sauce
- 2 tbsp. grated fresh ginger
- 3-4 garlic cloves, crushed
- 1 tbsp hot sauce, chili sauce, or sriracha
- 2 tbsp+ balsamic vinegar
- 1 tbsp+ lea and perrins
- 3 skinless boneless chicken breasts, sliced in thin strips
- drissle 1/2 sesame seed oil, and grapeseed oil for pan frying

- Struesel Topping:
- 1 - cup granulated sugar
- 1/2 - cup butter, softened
- 1 - cup eggnog
- 1 - 8 oz container sour cream
- 1 - teaspoon rum or butter extract
- 2 - eggs
- 2 1/2 - cups all-purpose flour
- 1 1/2 - teaspoons baking powder
- 1/2 - teaspoon baking soda
- 1/2 - teaspoon salt
- 1/3 - cup granulated sugar
- 1 - tablespoon all-purpose flour
- 1 - tablespoon butter, softened
- 1/4 - teaspoon ground nutmeg
- 1/4 - teaspoon cinnamon
Whole Wheat Buttermilk Sandwich Buns

1. Combine water, buttermilk, honey, salt, egg, and oil in large mixing bowl
- Yield:
- Fluffy homemade whole wheat buns with sesame seeds on top (can be made with white flour also)
- 12 buns
- Ingredients:
- 1/2 cup warm water
- 1 cup buttermilk, warmed*
- 2 teaspoons salt
- 1 egg
- 1 tablespoon oil or butter
- 1 tablespoon honey
- 1/4 cup dough conditioner**, optional
- 3 3/4 to 4 1/4 cups whole wheat bread flour
- 1 tablespoon dry yeast
- Egg wash ingredients:
- 1 egg white
- 1 teaspoon water
- Sesame seeds, for sprinkling

- 1 cup lowfat cottage cheese
- 1/2 cup lowfat yogurt
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 2 tablespoons onion, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon minced fresh parsley
- 1 minced garlic clove

- 1 tbs. olive oil
- 2 tbs. butter
- 6 to 8 fresh sliced mushrooms
- 2 tbs. finely chopped onion
- 1/3 cup flour
- 1 1/2 lbs. round steak, 3/4 to 1 inch thick
- 1 cup beef broth
- salt and pepper to taste
Mexican Beef Taco Salad

Directions Coat a large, nonstick skillet with cooking spray and place it over medium-high heat
- 1 85% 85% lean ground beef
- 1 package (3/4 ounce) taco seasoning
- 1/4 cup water
- 1 head romaine lettuce, chopped
- 1 can (11 ounces) corn, drained
- 2 tomatoes, chopped
- 1 small jar (8 ounces) low-fat Catalina salad dressing
- 1 package (8 ounces) baked tortilla chips, crushed
- to a large bowl, combine the lettuce, corn, tomatoes, and dressing. Toss gently to coat. Top with the meat and the chips just before serving.
