Pina Colada Fruit Salad Recipe

In a serving bowl, combine the first six ingredients
- 1-1/2 cups green grapes
- 1-1/2 cups seedless red grapes
- 1-1/2 cups fresh blueberries
- 1-1/2 cups halved fresh strawberries
- 1 can (8 ounces) pineapple chunks, drained
- 1/2 cup fresh raspberries
- 1 can (10 ounces) frozen non-alcoholic pina colada mix, thawed
- 1/2 cup sugar
- 1/2 cup pineapple-orange juice
- 1/8 teaspoon almond extract
- 1/8 teaspoon coconut extract

- 1/3 cup (70 grams) light brown sugar
- 1 1/2 cups (145 grams) walnuts (can also use pecans, hazelnuts or almonds), chopped
- 1/2 cup (65 grams) dried cherries or cranberries
- 1 1/2 cup dates, figs, and/or prunes (pits removed and cut into quarters)
- 1 cup (165 grams) dried apricots, cut into bite size pieces

- 1 cup packed brown sugar
- 1/3 cup butter, melted
- 2 tablespoons light corn syrup
- 1/3 cup chopped pecans
- 12 (3/4 inch thick) slices French bread
- 1 teaspoon grated orange zest
- 1 cup fresh orange juice
- 1/2 cup 2% milk
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 3 egg whites
- 2 eggs
- 1 tablespoon confectioners' sugar for dusting
