- 1 can (15 ounces) reduced-sodium black beans, rinsed and drained
- 4 cups baby spinach (about 4 ounces)
- 1 large tomato, chopped
- 1 cup shredded reduced-fat Cheddar cheese
- 4 tablespoons reduced-fat sour cream

Tex Mex Pizza

Preheat oven to 425 Place crust on ungreased pizza pan or cookie sheet
- 1 - 12 inch thin crust flat bread, pizza crust or Focaccia
- 8 oz. Monterey Jack cheese with peppers
- 1 - 15 oz. can black beans, rinsed
- 1 -11 oz. can corn with red and green peppers, drained
- 2 to 4 tbs. chopped pickled jalapeno peppers
