- 1 tablespoon paprika
- 2 teaspoons freshly ground black pepper
- 2 teaspoons salt
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 3 pounds beef brisket, trimmed of fat
- 1/2 teaspoon liquid smoke flavoring
- 2 tablespoons Worcestershire sauce
- 1 1/2 cups barbeque sauce
Cucumber and Celery Salad with Tuna

Directions In a medium bowl, stir together poppy seeds, vinegar, sugar, and oil
- 2 teaspoons poppy seeds
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- 2 tablespoons extra-virgin olive oil
- 2 cucumbers, halved lengthwise and cut into 1/4-inch half-moons (6 cups)
- 3 celery stalks, cut into 1/4-inch pieces, inner leaves reserved
- 2 cans (5 ounces each) solid white tuna in water, drained and flaked
- Coarse salt and ground pepper
Buttermilk Salad

- 1 cup Quinoa
- 2 cups water in a 2 quart microwave bowl.
- Cook on high 100% for 5 minutes and 60% for 8 minutes.
- Let stand for a few minutes and voila, perfect Quinoa.

- 2 eggs, slightly beaten,
- 2/3 cupmilk (whole, low fat or fat free),

- 1 can HEB Whole Kernal Corn, drained,
- 1 package (6 oz) jalapeno cornbread mix,
Wonton Tacos

Directions: Preheat oven to 350 degrees
- 12 small square wonton wrappers (stocked with the tofu in the refrigerated section of the market)
- 1 cup ground-beef (cooked)
- 1/2 cup refried beans
- 1 tsp. taco seasoning
- 1 1/2 cups shredded lettuce
- 1/2 cup shredded Mexican-blend cheese
- 1 tbsp. sliced black olives, chopped
- 6 tbsp. chunky salsa or pico de gallo

Quinoa with Sweet Potatoes and Broccoli

1.Bring the quinoa and water to a boil in a saucepan over high heat
- 1 cup quinoa
- 2 cups water
- 1 large sweet potato, peeled and cut into
- 1/4-inch cubes

- 1/4 cup unsweetened applesauce
