Tomato Vegetable Pot Soup

Place all of the ingredients in a large soup pot
- 6 cups water
- 4 tablespoons lentils
- 1 teaspoon basil
- 1 teaspoon thyme
- 1 teaspoon oregano
- 2 tablespoons Dr. Fuhrman's VegiZest
- 3 garlic cloves, chopped
- 8 tomatoes, chopped
- 1 broccoli stalk, chopped
- 2 onions, chopped
- 4 potatoes, chopped
- 1 pound carrots, chopped
- 1 cup green beans, chopped
- 1 cup cabbage, chopped
- 1 organic celery stalk, chopped
Summer Fruit Pie

Make pie shell by placing almonds in a food processor and processing until very fine
- PIE SHELL
- 1 cup almonds
- 1 cup dates, pitted (medjool are preferred)
- PIE FILLING
- 3 bananas, sliced
- 1 teaspoon lemon juice
- 2 kiwis, sliced
- 1 quart organic strawberries
- 1 pint blueberries
- 1/2 cup vanilla soy milk
- 1/2 bag frozen strawberries or 1 pint fresh organic strawberries
- 2 dates

- 4 ounces (112 grams) bittersweet or semisweet chocolate, chopped in small pieces
- 3/4 teaspoon cream of tartar
- Chocolate Whipped Cream:
- 1 cup (240 ml) heavy whipping cream
- 1/2 teaspoon pure vanilla extract
- 3 tablespoon (40 grams) granulated white sugar
- 1 1/2 tablespoons cocoa powder (I use Dutch-processed)

Carrabba's Lemon Butter Sauce

To clarify butter; melt 1/2 stick butter over low heat
- 2 Tablespoons clarified butter
- (you'll need about 1/2 stick, directions follow)
- 2 Tablespoons finely chopped yellow onion
- 2 Tabllespoons finely chopped garlic
- 2 Tablespoons fresh lemon juice
- 2 Tablespoons dry white wine
- Kosher Salt
- White pepper
- 2 Tablespoons cold butter
Blueberry Orange Smoothie

Blend all ingredients together in a high powered blender until smooth and creamy
- 3 dates, pitted
- 2 oranges, peeled
- 1 banana
- 1 cup frozen blueberries
- 1 tablespoon ground flax seeds
VANILLA GLAZE

Heat butter until melted. Stir in powdered sugar and vanilla
- 1/3 c. butter
- 2 c. powdered sugar
- 1 1/2 tsp. vanilla
- 2 to 4 tbsp. hot water
Avocado Herb Dressing

Blend all ingredients until smooth
- 1 small tomato, chopped
- 1/2 avocado
- 1/3 cup red onion, chopped
- 1/4 cup green pepper, chopped
- 2 cloves of garlic
- 2 tablespoons lemon juice
- 2 tablespoons Dr. Fuhrman's Riesling Raisin Vinegar
- 1 tablespoon Dr. Fuhrman's VegiZest
Avocado Orange Dressing

- 1 orange, peeled
- 1/2 ripe avocado
- 3 tablespoons Dr. Fuhrman's Riesling Raisin Vinegar

Easy Bean and Vegetable Soup

Combine all ingredients except spinach in a large sauce pot
- 5 cups fatfree vegetable broth, (or use water with optional veg. bouillon)
- 14 1/2 ounces diced tomatoes -- Italian style
- 15 ounces canned kidney beans, drained and rinsed
- 15 ounces canned cannelini beans, chickpeas, or other white beans, drained and rinsed
- 2 pounds chopped vegetables (may be frozen)--any combination--try to include carrots, broccoli, green beans, cauliflower, zucchini
- 1/2 cup diced potatoes or corn kernels (may use frozen, oil-free hash browns)
- 2-4 cloves garlic, minced
- 1 teaspoon basil
- 1/2 teaspoon oregano
- 1/2 teaspoon marjoram
- 1/4 teaspoon thyme
- freshly ground black pepper
- 1/2 teaspoon Tabasco, or other hot sauce
- 4-6 ounces fresh or frozen spinach
