- 1 (16 oz) pkg. ready to serve salad greens
- 1 (2 1/2 oz.) sliced pastrami, cut into 1/2" pieces
- 1 cup shredded part skim mozzarella cheese
- 4 plum tomatoes, chopped (I used 10 yellow cherry tomatoes)
- 1 t. Italian seasoning
- 1/3 c. Italian salad dressing
- 1 c. croutons
- sliced ripe olives
Substitute for Zesty Dry Italian Salad Dressing

The recipe below can be substituted for 1 packet of Zesty Italian Dressing Mix
- DRESSING:
- 1 1/2 teaspoons garlic powder
- 1 tablespoon onion powder
- 2 tablespoons oregano
- 1 tablespoon dried parsley
- 1 tablespoon sugar
- 1 teaspoon black pepper
- 1 teaspoon ground basil
- 1/4 teaspoon thyme
- 1/2 teaspoon dried celery leaves
- 2 tablespoons mix
- 1/4 cup vinegar
- 2 tablesppons water
- 1/2 to 2/3 cup olive oil, canola oil, or salad oil

In large skillet, heat corn oil and add prosciutto
- Dressing:
- 5 cups romaine, bite size
- 5 cups iceberg lettuce, bite size
- 1 sm red onion, thinly sliced
- 6 oz blue cheese, crumbled
- 1 red pepper, diced
- 1 can of artichoke hearts, drained and cut into quarters
- 5 green onions, chopped
- corn oil, for frying
- 4 oz. prosciutto, thinly sliced and cut into 2" squares

- 2 tsp sugar
- 1/2 c. water
- 4 cloves of garlic grated
- 1/3 c. red wine vinegar
- 1 T. salt
- 1 c. olive oil
- fresh ground black pepper, to taste
- 1 pinch dried oregano
