Ingredients

  • 1 Cup cooked, riced cauliflower
  • 1 Egg, beaten
  • 1/2 tsp crushed garlic
  • Olive Oil (optional)
  • 1 Cup Mozzarella Cheese - shredded
  • 1 tsp dried Oregano
  • 1/2 tsp Garlic Salt
  • Pizza Sauce, shredded cheese and your choice of toppings*

Step 1

To "rice" the cauliflower: Take 1 large head of cauliflower, remove stems and leaves and chop the florets into chunks. Add to food processor and pulse until it looks like grain-DO NOT PUREE-Place riced cauliflower in microwave for 8 minutes. One large head=approx 3 cups Can be stored in fridge up to 1 week.

Preheat oven to 450`. Spray a cookie sheet with non stick spray. In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to cookie sheet and using hands, pat out into a 9 inch round. Optional: Brush with olive oil to help with browning. Bake at 450` for 15 minutes or til top browned.

Remove from oven. To the crust, add sauce, toppings and cheese. Place under broiler at high heat just until cheese is melted - approx 3-4 minutes

*Note: Toppings need to be pre-cooked since you are only broiling for a few minutes
