Tuna Melt Sandwich

In this recipe we go with light mayo and top it with fresh tomato slices and reduced fat Cheddar.

Ingredients
- 1 large can or 2 small cans solid albacore tuna
- 1/3 cup reduced fat mayonnaise
- 2 stalks celery split and sliced
- 2 pickle spears sliced thin or sub 1/4 cup dill pickle relish
- 1 tablespoon minced flat-leaf parsley or parsley flakes
- 1 heaping Tablespoon diced red onion
- Mrs Dash Seasoning
- Penzy's Northwoods Seasoning
- Fresh cracked pepper
- 4 kaiser rolls
- 8 slices of reduced fat cheddar cheese or your favorite sliced cheese
- 2 tomatoes sliced (optional)

Step 1
Drain tuna and add to a medium mixing bowl, add mayo, celery, pickles, onion, season with ~ 1 tsp of each seasoning. Mix well with a fork until well blended.
Preheat oven to 350. Split the kaiser rolls and spread tuna mixture evenly over the 8 halves. Top with tomato if using, season lightly with pepper. Top with a slice of cheese and bake for 10 - 15 minutes until hot and cheese melts. Serve with chips.
