Canadian Cauliflower Cheddar Cups

From Costco Connection. Made these for breakfast and they were very good! Had trouble putting the Canadian bacon in the muffin tin (they kept tearing!) so I ended up putting them flat in my muffin caps pan and mounding up the cauliflower mixture in the center. That worked fine although it was a little messier to eat. Perhaps if the Canadian bacon was warm, it would have formed inside the muffin tin better? I made extra and put them in the refrigerator for quick and healthy breakfasts for my daughter before school.

Ingredients

  • 12 slices Canadian bacon
  • 2 cups cauliflower florets
  • 2 T light sour cream (I used plain yogurt and it was great!)
  • 1 T fresh parsley
  • 1 T green onion
  • Salt and pepper to taste
  • 1/2 cup grated cheddar cheese

Preparation

Step 1

Preheat oven to 375. Very lightly grease a 12 cup mini-muffin pan. Line each cup with a slice of Canadian bacon. On the stovetop, steam cauliflower until very soft. Transfer cauliflower to a bowl and mash it. Add sour cream, parsley, green onion, and salt and pepper, to taste, and mix well.

Fill Canadian bacon cups with cauliflower mixture. Top each cup with cheddar cheese. Bake for 15 minutes (I only baked for 5-10 and that was plenty - perhaps would have needed longer if using the muffing tin).
