Ingredients
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/4 tsp. Italian seasoning
- 1/2 tsp. onion powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 8 chicken thighs
- 1 cup Panko breadcrumbs
- 1/2 cup grated Parmesan
- 1 tsp. dried parsley or 1 TB fresh parsley
- Cooking Spray

Step 1
Preheat oven to 425. In a small bowl whisk together olive oil, garlic, Italian seasoning, onion powder, salt, & pepper. Put chicken in a Ziploc bag & pour in marinade. Let marinate for 30 minutes. If you don’t have time to marinate, just put everything in a large bowl & turn to coat. Line a baking sheet with foil & spray with cooking spray. In a shallow dish, combine breadcrumbs, cheese, & parsley. You can also put in a food processor for a finer texture. Dredge chicken in breadcrumb mixture & place on baking sheet. Coat tops of chicken with cooking spray. Bake for 30 minutes, flipping halfway through until browned & cooked through.
