Bacon & Tomato Risotto

Ingredients

  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 4 bacon rashers diced
  • 2 pkts sliced mushrooms
  • 2 cups Arborio rice
  • 1 tsp crushed garlic
  • 1 400g can crushed tomato
  • 1 l chicken stock
  • 2 cups water
  • 1/2 cup Parmesan cheese

Preparation

Step 1

1. Combine water & stock & bring to a slow simmer
2. Heat oil in a pot. Saute bacon & onion till soft. Add mushrooms.
3. Add rice & garlic to bacon mixture. Saute for 1 min. Add crushed tomatoes.
4. Add stock 1 cup at a time stirring until stock is absorbed.
5. Continue adding stock until all stock is used & rice is tender.
6. Remove from heat & mix in Parmesan.
