Ingredients
- Elderberries - 8 cups
- White sugar - 2 1/3 cup
- Brown sugar - 1 Cup
- 4 tbsp of this mix : lemonjuice - red wine vinegar - coffee liquor - equal parts
- 1/2 tsp salt
- 1/4 tsp cinammon
- 1/2 tsp nutmeg
- 1/8 tsppinch of natural unsweetened cocao
- 3/4 c instant tapioca

Step 1
Let sit overnight in refrigerator
Remove from refrigerator, add 1 tbsp butter in small bits
Let stand for 30 minutes.
Preheat oven to 400º
Line 2 9" pie plates with crust
Divide the elderberry mix equally into the 2 shells
Cover top with lattice crust or create your own design. Have fun.
Bake at 400º for ten minutes. Reduce heat to 350º, bake 30-40 minutes longer.
Cool thoroughly on rack, then in refrigerator.
