Garlic and Rosemary Roasted Pork Tenderloin

Ingredients
- 2 pork tenderloin roasts (12oz each), trimmed
- 4 large cloves garlic, crushed
- 3/4 tsp dried rosemary
- 3/4 tsp pepper
- 1/2 tsp salt
- cooking spray

Preparation
Step 1
1. Preheat oven to 500 degrees
2. Place garlic, rosemary, pepper and salt in a small bowl, stir to mix well
3. Place the roasts in a baking dish, spray the tops lightly with cooking spray. Place the pan in the oven and reduce the oven temperature to 475 degrees
4. Roast for about 25 minutes or just until the meat in the center of the roast is no longer pink when cut with a knife.
5. Slice the roasts thinly on the diagonal and serve immediately.
