Gumdrop cookies

These are good anytime of year and well received. You could easily double the recipe and still not have enough for your crowd.
Ingredients
- ST LIST:
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 stick butter, room temperature
- 1/2 cup shortening (Crisco butter flavor baking sticks are the best)
- 1 egg, beaten
- 1 teaspoon vanilla
- ND LIST:
- 2 cups all purpose flour
- 2 cups uncooked oatmeal
- 1/2 cups flaked coconut
- 1 teaspoon baking soda
- 1/2 baking powder
- 1/4 teaspoon salt
- 1 cup or small bag spiced gumdrops

Step 1
Start by cutting the gumdrops smaller, in half or quarters (kitchen scissors work great for this)
Pre-heat your oven to 375°F.
Mix all of the fist list of ingredients together till fluffy or well combined
Add second list of ingredients (leaving gumdrops for last) mix till well combined
Drop spoonfuls onto lightly greased cookie sheet or parchment lined baking sheet (i use a med sized cookie scoop and silicone baking sheet)
Bake 7 to 10 minutes, till lightly brown
This recipe makes about 3 dozen cookies. I never really know, because my family eats them warm right from the cooling rack.
Make a bunch and freeze some for later OR...
Make extra dough, scoop cookies onto a wax paper lines sheet pan and freeze uncooked dough. Transfer it to a separate container so you can bake a few for later. Be sure to use a good freezer bag or food saver container. Don't forget to write down the temperature and bake time.
