Polynesian Pineapple Dessert

Ingredients
- 30 ritz crackers
- 1/4 cup butter or margarine
- 4 egg yolks
- 1/2 cup sugar
- 2 cups crushed pineapple, undrained
- 1 3-ounce package lemon gelatin
- 4 egg whites
- 1/2 cup sugar
- 1 cup whipping cream

Step 1
Crush or grind crackers into fine crumbs. Mix thoroughly with butter. Set aside 1/4 cup of the crumbs for topping. Press remaining crumbs evenly over bottom of a 9×12-inch glass dish. Bake at 350 degrees for 7 minutes. Set crush aside. Beat eggs yolks, then combine with 1/2 cup sugar and crushed pineapple. Place mixture on medium heat and bring to a boil. Stir constantly. Turn heat to low and continue to stir until mixture is thickened. Add gelatin. Stir immediately until gelatin is completely dissolved. Cool over ice or in the refrigeratr until gelatin starts to thicken. Beat egg whites until foamy. Gradually add 1/2 cup sugar white beating to a soft peak. Carefully fold the beaten egg whites into the pineapple mixture. Pour over the baked crust. Whipe cream,. sweetene to taste, and spread evenly over the pineapple mixture. Sprinkle the 1/4 cup crumb mixture evenly over the whipped cream.
