- 1 Tablespoon olive oil
- 2 Medium onions, sliced
- 2 Red apples(fuji or gala) halved, cored, and sliced
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 sheets frozen puff pastry, thawed
- 1/2 cup sour cream
- 1/4 cup grated Parmigiano Reggiano Cheese

Preheat oven to 400 degrees. Heat olive oil in a large skillet over medium heat. Cook onions until golden brown, 20 to 25 minutes. Add apples, thyme, salt and pepper and cook until soft, about 2 minutes. Meanwhile, place each sheet of pastry on a parchment-lined baking sheet and prick all over with a fork. Spread sour cream over the pastry sheet, leaving a 1-inch border. Top with the apple and onion mix and sprinkle evenly with the cheese. Bake until the pastry is crisp and browned. 30 to 35 minutes. Cut each sheet into 12 pieces before serving
