Ingredients

  • 4 Tilapia fillets
  • 1 cup seasoned bread crumbs
  • 1 tbsp grated Parmesan cheese
  • 1 tbsp of dried parsley
  • Old Bay seasoning
  • 1/8 tsp curry powder
  • olive oil
  • butter
  • white wine, vinegar, or beer

Step 1

Wash the tilapia fillets. Soak the tilapia fillets in cold water with a splash of vinegar, wine or beer for 15 minutes. Pat dry and season with Old Bay. Coat the tilapia in olive oil.

Mix bread crumbs, Parmesan cheese, and parsley in a small shallow bowl.

Place cast iron skillet on medium-high heat. Add about 2 tbsps of olive oil, 1 tbsp of butter, and 1/8 tsp of curry powder. Heat until butter is melted and oil is hot. Make sure the mixture coats the bottom of the skillet.

Set oven to broil. Dip the oiled and seasoned tilapia in the bread crumb mixture. Place in heated skillet. Allow tilapia to cook for about 2 minutes or until golden brown. Use spatula or tongs to turn and allow to brown on the other side.

Place the skillet in the oven and broil for about 5 minutes. Watch the tilapia carefully as some ovens broil faster or slower than others.
