Banana-Nut Upside Down French Toast

Ingredients

  • 1/2 cup butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup pecans or walnuts, chopped
  • 4 rice pananas, cut into 1/2 in thick slices
  • 1 16oz loaf French bread, cut into 1 inch thick slices
  • 6 large eggs
  • 2 cups milk
  • 2 tsp. nutmeg
  • 2 tsp. vanilla extract

Step 1

1. Combine butter, brown sugar, and nuts in a small bowl. Spread evenly over the bottom of a 9x13 inch pan. Layer bananas and then bread slices on top of brown sugar mixture.

2. In a medium bowl, whisk eggs, milk cinnamon, nutmeg, and vanilla. Pour evenly over bread slices and press slices down to absorb egg mixture. Cover and refrigerate at least 3 hours or overnight.

3. Preheat oven to 350 degrees. Bake uncovered for 50 minutes, or until a knife inserted in the center comes out clean. Cool for 10 minutes. Cut into slices and flip upside down onto each plate so banana-caramel mixture is on top.
