Ingredients

  • 1 cup chopped dates
  • 3/4 cup boiling water
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup shortening
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 2 eggs
  • 3/4 cup chopped walnuts (optional)

Step 1

Pour boiling water over the dates and let cool. Heat oven to 350 degrees.

Combine the flour, soda and salt. With an electric mixer set on medium-low speed, beat the shortening, sugar and vanilla until creamy. Beat in the eggs, one at a time, beating well after each addition. Reduce speed to low and add flour mixture and dates (with water). Stir in the walnuts.

Pour batter into a greased loaf pan. Bake for 1 hour. Cool before removing bread from pan.
