Ingredients
- 5 T red wine vinegar
- 1/4 C sour cream
- 2 T sugar
- 2 t fresh sniped parsley
- 1 t salt
- 2 cloves minced garlic
- 1/2 t dry mustard
- 1 t olive oil
- 5 C fresh baby spinach
- 6 10" flour tortillas
- 6 slices mozzarella cheese
- 8 oz fresh sliced mushrooms
- 12 crisply cooked and drained slices of bacon
- 1/2 C thinly sliced onions
- 3 hard boiled eggs - cooled, shelled and sliced

Step 1
Prepare dressing by whisking together vinegar, sour cream, sugar, parsley, salt, garlic, dry mustard and olive oil. Divide spinach among the tortillas, top with cheese, mushrooms, bacon, onions, and eggs. Drizzle with dressing and roll.
