Sun Dried Tomato Linguine

Ingredients
- 1/2 cup sun dried tomato halves, snipped into strips
- 8 oz. chicken broth
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 4 ounces pitted kalamata olives, sliced
- 2 tablespoons dried basil
- 1 teaspoon salt
- 16 ounces dry linguine, cooked and drained
- 16 ounce carton sour cream
- 1/4 cup grated Parmesan or Romano cheese

Preparation
Step 1
Pour chicken broth into a 2 cup measuring cup, add tomatoes and heat in microwave until just boiling; set aside for 10 minutes.
Meanwhile, heat oil in large skillet over medium-high heat. Add garlic and cook for 1 minute.
Add tomatoes and chicken broth to skillet along with basil, salt and olives. Stir in sour cream and cook until heated.
Add hot linguine and toss well. Place on serving platter. Sprinkle cheese over top. Serve immediately.
