Capellini Cake with Caramelized Onions and Cheese

Ingredients

  • 2 Tbs. butter
  • 2 Tbs. olive oil
  • 3 onions, sliced
  • 1 1/2 tsp. salt
  • 1/2 lb. capellini
  • 2 eggs
  • 3/4 cup parmesan cheese
  • 1/4 cup fresh parsley
  • 1/4 tsp. black pepper

Step 1

Melt 1 Tbs. butter and 1 Tbs. oil in a frying pan over low heat. Add onions, 1/2 tsp. salt. Cover and cook for 20 minutes. Uncover, increase heat to moderately high and cook, stirring until golden. Cook the pasta until just done, about 3 minutes in boiling, salted water. Beat the eggs and add to the pasta with onions, cheese, parsley, 1 tsp. salt, pepper and toss. In a non-stick pan, add 1/2 Tbs. butter and 1/2 Tbs. oil and melt over moderately low heat. Pour in mixture. Press down, cook until crisp, about 15 minutes. Invert onto a baking sheet. Add remaining oil and butter to pan and melt over moderate heat. Slide cake in and cook for 5 minutes.
