Southwest Marinated Grilled Chicken

Knock dinner out of the park with this slammin' Southwest Marinated Grilled Chicken. Packed with tons of flavor, this dinner will become a new family favorite.
Ingredients
- 1/2 cup butter, melted
- 1/2 cup fresh lemon juice
- 1 tablespoon paprika
- 1 tablespoon dried oregano
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon garlic salt
- 1 teaspoon cumin
- 2 1/2 pounds chicken quarters
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Step 1
Add lemon juice to a small bowl.
Whisk in spices until combined, whisk in melted butter. Reserve 1/2 cup for basting.
Place washed chicken in a large resealable bag and pour marinade over, gently massage to combine chicken with flavors.
Seal, place in pan and chill for 8 hours.
Preheat grill to 350 to 400°F (medium high heat). Remove chicken from marinade, discard marinade.
Grill covered with grill lid, 45 to 60 minutes or until chicken reaches 145°, basting often with reserved butter mixture.
Note: you will need to re-heat the mixture before basting.
