Pasta salad with sausage, peppers & onions

Ingredients
- 2 Cups elbow pasta
- 1/2 pound hot Italian sausage
- 1 Red pepper
- 1 Poblano pepper
- 1/2 red onion
- 3 Tablespoons white balsamic vinegar
- 3 Tablespoons Fiore Tuscan Herb Olive Oil
- 1 Teaspoon salt
- 1/2 Teaspoon pepper
- 6 Basil leaves, chopped
- 1 Teaspoon fresh oregano, chopped
- 1/2 Cup shredded Parmesan

Step 1
Cook elbow pasta as directed on box, drain and set aside. Heat gas grill to 400 degrees. Cook sausage turning to evenly brown all sides until thoroughly cooked (about 8 minutes. Remove and set aside covered in foil. Grill peppers until charred on all sides (about 2 minutes per side)and place in a bowl covered in plastic wrap for 10 minutes. Meanwhile, chop onion into small pieces. In a large bowl whisk together the vinegar, olive oil, salt and pepper. Add fresh chopped herbs. Cut sausage into small bite sized pieces. Next, peel peppers, remove seeds and finely chop (when handling the poblano pepper you may want to use disposable gloves). Toss pasta, sausage, Parmesan, peppers and onion with the dressing. Serve right away or chill and serve cold.
