Key Lime Ritz Cracker Icebox Pie

A no-crust icebox pie made with layers of creamy lime filling and Ritz crackers, then garnished with grated lime zest and flaked coconut.
Ingredients
- 1 cup heavy whipping cream
- 1 (14-ounce) can sweetened condensed milk, chilled
- Pinch of salt
- 1/4 cup fresh squeezed key lime juice
- 1 teaspoon grated key lime zest
- 1 1/4 - 1 1/2 sleeves of Ritz crackers (I used R.F.)
- Flaked coconut, optional

Preparation
Step 1
Pour heavy cream into a 4-cup measuring cup; whisk in sweetened condensed milk and salt. Whisk in the lime juice until thickened, 1-2 minutes.
Spread 1/2 cup of the filling on bottom of a 9-inch pie plate. Top with a single layer of Ritz crackers. Continue alternating layers of filling and crackers, ending with filling on top. (You should have about 3 layers of crackers.) Sprinkle grated zest over the top.
Refrigerate at least 4 hours, but longer is better.
To serve, cut into wedges and garnish with flaked coconut, if desired.
