Pear, Pea and Watercress Soup

Ingredients
- 1 Tbsp butter
- 1 small onion, finely chopped
- 1 lb firm pears, peeled, cored and finely sliced
- 2 lbs fresh peas, shelled (or use 1 2/3 lbs frozen peas)
- 1/2 cup dry sherry
- 1/4 tsp salt
- 1/4 tsp ground white pepper
- pinch of ground mace
- 4 cups chicken stock
- 2 bunches watercress, stalks removed
- 2 fresh or dried pears, thinly sliced

Preparation
Step 1
1. In a large saucepan, melt butter and add the onion pears and peas. Cook for 2-3 minutes over gentle heat. Add sherry and seasoning and cook, covered, for 20 minutes over low heat. Add stock and watercress and bring to a boil. Simmer for 15 minutes, then remove from heat and cool a little.
2. Blend soup until smooth, then sieve back into the saucepan. Gently reheat. Ladle into bowls and garnish with slices of pear.
