Ingredients

  • 6 Large Red Or Green Bell Peppers
  • 2 1/2 Cups Long Grain White Rice
  • 2 # Lean Ground Beef
  • 1/2 Medium Sweet Onion Diced
  • 1 Can 14.5 Can Of Diced Tomato's
  • 10 Oz Can Rotel Diced Tomatos & Green Chiles Diced
  • 16 Oz Cheddar Cheese Grated - About 4 Cups
  • 2 Cloves Garlic Chopped Fine

Preparation

Step 1

Preheat oven to 400 degrees~
~
Cut the peppers in half - top to bottom~
Remove the ribs and seeds - set a side~
~
In a medium sauce pan - cook the rice according to the pkg.~
Brown the ground beef and add onion & garlic.~

In a medium sauce pan bring the tomatos to a boil and simmer for 5

In Large bowl add all the above items. Salt and pepper to taste~
~
Place the bell peppers in a 9X13 pan with the skin side down. Evenly
divide the meat mixture ~
~
Cover the pan with foil and bake about 40 mintes. Remove the pan and
take off the foil.~
cover the peppers with cheese and put back into theoven until the cheese
melts- about 5 minutes.~
~
Special note - before using wilt the peppers in hot water for 5 minutes -
this softens the peppers and~
reduces the cooking time.~
