blue ribbon apple pie

can use any apples, jonathans have best flavor. cortland or pippin, or combine granny smith and macs.
Ingredients
- 2 ... 9 inch pie shell... for crust+top
- 1 large egg separated
- 7 medium apples peeled, cored + sliced
- 1 Tbsp. lemon juice
- 3/4 cups sugar or combination of sugar and brown sugar
- 1/3 cup flour
- 1 +1/4 tsp. cinnamon
- 3 Tbsp. cold unsalted butter in pieces
- 1 Tbsp. sour cream

Step 1
preheat oven to 450F
place apple slice in a large bowl, toss with lemon juice. stir together sugar, glour and cinnamon in a small bowl. add to apples. toss to coat apples evenly. sppon into pie crust. place butter peices on top of apples mixture. moisture edge of crust with water, roll second crust on top of filling. seal edges, cut slits in crust to allow steam to escape. beat egg yolk and sour cream in a bowl, set aside. bake pie for 10 minutes, reduce oven to 375F bake another 35 minutes. brush pie with egg mixture and bake until golden brown, about 20 minutes.
