Chrissy's Mac n Cheese

I got this recipe from March 7, 2016 People magazine. This is Chrissy Teigen's recipe.
Ingredients
- Cheesy Garlic breadcrumb ingredients:
- 1/2 cup unsalted butter
- 1 pound uncooked medium pasta shells
- 1 tablespoon vegetable oil
- 5 Teaspoon flour
- 5 cups whole milk
- 3/4 pound processed American cheese, roughly torn
- 3 cups shredded cheddar cheese, divided
- 3 cups shredded Gruyere cheese, divided
- 3/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 2 teaspoon kosher salt
- 4 slices day-old white bread, torn into pieces
- 3 tablespoons unsalted butter
- 3 cloves garlic, finely chopped
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 tablespoons Parmigiano-Reggiano cheese

Preparation
Step 1
Preheat oven to 425˚F
Grease a 13X9 in. baking dish with butter.
In a large stockpot of salted boiling water, cook the pasta until al dente, about 11 minutes. Drain, rinse, and toss with oil to prevent sticking.
Melt 1/2 cup butter in a large saucepan over medium-high heat. Add the flour and cook, whisking constantly, until mixture turns a light and toasty brown, 5 to 6 minutes. Gradually which in the milk and bring mixture to a boil. Reduce heat to medium and whisk constantly until thickened , 4 to 5 minutes.
Gradually add the American cheese, 2 1/4 c. cheddar & 2 1/4 c. Gruyere to sauce, and cook, whisking constantly until smooth, about 5 minutes. Whisk in the cayenne, black pepper and salt.
Stir in cooked pasta and cook until heated through, about 2 minutes.
Transfer mixture to prepared baking dish. Top with remaining cheese and sprinkle with breadcrumbs.
Bake until topping is bubbly, browned and crisp, about 8 minutes.
Cheesy Garlic Breadcrumbs
Process the bread in a food processor until finely ground, yielding 4 cups.
Heat butter in a large skillet over medium-low until foamy. Add the garlic and cook, stirring constantly, until fragrant but not brown, 1 to 2 minutes.
Add breadcrumbs, increase heat to medium and cook, stirring often until toasty and browned, 7 to 9 minutes. Stir in salt and pepper, remove from heat and transfer to a large plate. Cool 5 minutes. Sprinkle with cheese, and toss to combine.
