Light Smoked Salmon Matzo Brie

This is my first recipe in a series of “Jewish Dishes Without a Heaping Side of Guilt.” Enjoy the 200 calorie Matzo Brie for breakfast, lunch, or dinner!
Ingredients
- 3 Tbsp. Egg White
- 1/2 Egg
- 1 Thin Tea Matzo
- 1/2 Cup Boiling Water
- 1 Oz. Smoked Salmon
- Dash of Salt
- Touch of Pepper
- Sprinkle of Basil

Step 1
1) Break Matzo into small pieces in a medium sized bowl
2) In a separate bowl beat an egg. Pour out half, add the egg white, salt and pepper to taste and mix
3) Pour the boiling water over the Matzo. Let it sit for a few minutes. Use a strainer to drain excess water
4) Spray a skillet with pam and heat it on low. Add the Matzo, let it harden on the pan for a few minutes
5) Once the Matzo is harder add the egg mixture. Cook on low heat and use a spatula to separate the mixture into small pieces. Cook until the egg stops running
6) Plate the Matzo Brie and sprinkle oregano
7) Mix in small pieces of smoked salmon
