Ingredients

  • Date Filling:
  • Combine in a saucepan:
  • 1 c. chopped dates ( I use the dates in a solid block and chop them up ..Use the whole block)
  • 1 tablespoon br. sugar
  • 1/2 c. water ( Add a touch more water if needed)
  • Bring to boil and cook until dates are soft enough to be mashed with a fork( about 5 min.). The mixture should be the consistency of jam. Add 2 tbsp. of lemon juice . Set aside to cool.
  • Crumb Mixture:
  • Preheat oven to 325 degrees.
  • Blend or sift together:
  • 1 c. pre-sifted all purpose flour
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • Cut in:
  • 1 c. butter (or margarine)
  • Then blend in:
  • 1 c. lightly packed brown sugar
  • 2 c. rolled oats

Step 1

Press 1/2 the mixture over the bottom of a greased 8" square pan. cover evenly with cooled date filling. Then cover with remaining crumb mixture and pat until smooth.

Bake in pre-heated oven at 325 degrees for 35-40 minutes until light golden brown. Cool before cutting into squares
