Warm Mushroom & Pancetta Salad

Ingredients
- Salad:
- 8 cups assorted greens
- 1 tb olive oil
- 1/2 cup shallots, thinly sliced
- 2 oz pancetta, thinly sliced
- 4 oz oyster mushrooms
- 1/4 cup dry sherry
- Sherry Vinaigrette:
- 1/2 cup sherry vinegar
- 1 tb honey
- 1/2 cup canola oil
- 1 cup olive oil
- pinch salt
- pinch fresh ground pepper

Preparation
Step 1
Vinaigrette:
1) Whisk together first four ingredients, then season with salt and pepper.
Salad:
1) Wash and drain the salad greens. Place in a bowl and toss with enough of the vinaigrette to coat lightly. Arrange the salad greens on plates.
2) In a frying pan, heat the olive oil and saute the shallots and pancetta until golden. Add the mushrooms and saute until tender.
3) deglaze the pan with the sherry and remove from the heat.
4) Arrange the salad greens on plates. Place the mushroom mixture and any pan juices over the salad greens. Serve at once.
