Spinach Lasagna Roll-Ups

Ingredients
- 12 lasagna noodles
- 2 eggs, lightly beaten
- 2 1/2 C. ricotta cheese
- 2 1/2 C. shredded mozzarella cheese
- 1/2 C. grated Parmesan cheese
- 1 pkg. (10 oz.) frozen chopped spinach, thawed & squeezed dry
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. ground nutmeg
- 1 jar Ragu Old World style spaghetti sauce, flavored with meat

Step 1
Cook lasagna noodles according to pkg. directions; drain. In a bowl, combine the eggs, cheeses, spinach, salt, pepper & nutmeg. Spread 1/3 C. cheese mixture over each noodle; carefully roll up. Pour 1 C. spaghetti sauce into an ungreased 13" X 9" X 2" baking dish. Place roll-ups seam-side down over sauce. Top with remaining sauce. Bake, uncovered, at 375 degrees for 20 - 25 min., or until heated through.
