Apple Pancakes

- 2/3 cup whole wheat flour
- 2/3 cup unbleached all-purpose flour
- 1/3 cup cornmeal
- 1 tablespoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon baking soda
- 1 cup nonfat plain yogurt
- 1/2 C milk
- 3/4 cup fat-free egg substitute
- 2 tablespoons canola oil
- 1 apple, peeled, cored, and coarsely grated
- 1 1/2 cups chopped pecans

Step 1
1. In a large bowl, combine the flours, cornmeal, baking powder, ginger, baking soda, yogurt, milk, egg substitute, and oil until combined.
2. Fold the grated apples into the batter.
3. Coat a large, nonstick skillet with nonstick cooking spray and heat over medium heat.
4. For each pancake, spoon 2 to 3 tablespoons (25 to 45 ml) of the batter into the skillet. Cook for 2 minutes or until bubbles appear on the surface and edges set. Flip to the other side.
5. Cook until lightly browned, about 2 minutes. Repeat with the remaining batter.
6. Top each serving with 2 tablespoons chopped pecans.
