Pastrami and Spinach Stuffed Chicken

Ingredients

  • 1 Tbs oil
  • 32 oz. frozen spinach
  • 1 large onion,diced
  • 3 cloves garlic,minced
  • salt and pepper to taste
  • 8 chicken bottoms,deboned
  • 1/2 lb.thin pastrami slices
  • 1/2 cup ketchup
  • 1/2 cup duck sauce

Step 1

saute onions until transparent. Add spinach and garlic and let cook for 5 min. Add salt and pepper,Mix until smooth. Remove from heat and drain off as much liquid as possible. Lay a chicken cutlet on surface. Down the center spread a 1" strip of spinach mix,layer a strip of pastrami and another layer of spinach. Fold both sides over center,turn over and place seam side down in a 9x13 pan. Combine dressing ingred. and pour over prepared stuffed cutlets. Cover and bake at 350 for 1hr and 45 min.
