Ingredients

  • 3 teaspoons ground cinnamon
  • 2 1/2 cups sugar
  • 6 cups sliced, pared red delicious apples (4 medium apples)
  • 3 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 cup cooking oil
  • 4 eggs
  • 1/4 cup orange juice
  • 2 1/2 teaspoons vanilla

Preparation

Step 1

Combine cinnamon and 1/2 cup sugar in bowl. Toss with apples. Set aside.

Sift together flour, remaining sugar and baking powder in another bowl. Add oil, eggs, orange juice and vanilla. Beat 2 minutes using an electric mixer at medium speed. Pour half of batter into greased 10-inch tube pan. Top with half of apple mixture. Repeat layers, ending with apple mixture.

Bake at 350deg for 1 hour and 35 minutes or until done. Cool in pan on rack 20 minutes. Remove from pan and cool on rack right side up.
