IRISH APPLE CAKE

Ingredients

  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 4 cups peeled apples, diced
  • 1 cup walnuts
  • 1 (12 ounce) package butterscotch chips

Preparation

Step 1

Cream vegetable oil, sugar, eggs and vanilla. Combine flour, salt, baking powder and cinnamon. Add to creamed mixture. Mix well and add apples. Fold in nuts. (Mixture will be thick.) Pour into a greased and floured 9 x 13 pan. Sprinkle chips on top. Bake at 350deg for 45 to 50 minutes.
